Description

Creamy homemade banana pudding layered with vanilla wafers and fresh bananas for a classic Southern dessert perfect for potlucks, holidays, and family gatherings.


Ingredients

  • 3/4 cup sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups milk
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 box vanilla wafers (8 oz)
  • 4 bananas, sliced

Instructions

  1. Whisk sugar, flour, and salt in a saucepan.
  2. Slowly whisk in milk and cook over medium heat until thick and bubbly.
  3. Reduce heat and cook 2 more minutes.
  4. Whisk eggs in a bowl.
  5. Slowly add a small amount of hot pudding mixture into eggs while whisking.
  6. Return egg mixture to saucepan and cook until a gentle boil begins.
  7. Cook for 2 minutes and stir in vanilla extract.
  8. Cool pudding for 15 minutes, stirring occasionally.
  9. Layer vanilla wafers in an 8-inch square dish.
  10. Add half the bananas over the wafers.
  11. Spread half the pudding over the bananas.
  12. Repeat layers and finish with pudding on top.
  13. Cover and refrigerate for at least 4 hours or overnight.
  14. Top with crushed vanilla wafers before serving.

Notes

  1. Use ripe bananas with a few brown spots.
  2. Chill overnight for the best flavor.
  3. Store refrigerated up to 4 days.
  4. Do not freeze because the texture may become watery.
