Description
Classic Homemade Cherry Pie with flaky butter crust and sweet cherry filling made from fresh or frozen cherries.

- 6 cups sweet cherries, pitted and halved
- 2/3 cup granulated sugar
- 1/3 cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon almond extract
- 1 tablespoon unsalted butter
- 2 1/4 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1 cup cold unsalted butter, cubed
- 7 tablespoons ice water
- 1 egg
- 1 tablespoon milk
- Coarse sugar for topping
Instructions
- Wash and pit the cherries before slicing them in half.
- Mix cherries with sugar, cornstarch, lemon juice, vanilla, salt, and almond extract.
- Prepare the crust by combining flour, sugar, and salt, then cut in cold butter.
- Add ice water until dough forms and divide into two disks.
- Roll out one crust and place it in a pie dish.
- Fill the crust with cherry filling and dot with butter.
- Roll out the second crust and place it over the pie or create a lattice design.
- Brush with egg wash and sprinkle with coarse sugar.
- Bake at 400 degrees Fahrenheit for 20 minutes.
- Reduce heat to 350 degrees Fahrenheit and bake for 40 to 50 minutes until bubbly and golden.
- Cool completely before slicing and serving.
Notes
- Keep the butter cold for a flaky crust.
- Frozen cherries work well after thawing and draining excess liquid.
- Allow the pie to cool fully for the filling to set properly.
