Russian Pelmeni are tender, meat-filled dumplings wrapped in elastic dough—a traditional Russian comfort food perfect for cozy nights. These freezer-friendly dumplings are easy to make ahead, boil in minutes, and serve with sour cream, broth, or butter for a hearty meal.
Ingredients

4 cups (480 g) all-purpose flour

1 cup (240 ml) lukewarm water

1 teaspoon salt (for the dough)

1 pound (450 g) ground beef or pork (or a mix)

1 medium onion, finely chopped

Instructions

Make the dough: Combine flour and salt in a large bowl. Make a well, add eggs and water, and stir until a shaggy dough forms.

Knead: Transfer dough to a floured surface. Knead for 10 minutes until smooth. Wrap and rest for 30 minutes.

Prepare filling: Mix ground meat, onion, salt, and pepper until combined.

Roll and cut: Divide dough into four. Roll one portion at a time to 1/16 inch thickness. Keep the rest covered.

Shape dumplings: Cut circles (2.5-inch). Place 1 teaspoon filling in the center, fold into a half-moon, seal edges, and pinch corners together.

Cook: Bring salted water to a boil. Add dumplings and cook until they float, about 5 minutes. Remove with a slotted spoon.

Serve: Enjoy hot with sour cream, butter, or broth.
