  • 2 Tbsp extra virgin olive oil

  • 1 large onion, diced

  • 3 medium carrots, sliced

  • 3 celery stalks, chopped

  • 4 garlic cloves, minced

  • 8 cups low-sodium chicken or vegetable broth

  • 1 lb bone-in, skin-on chicken breast

  • 2 bay leaves

  • 1 cup small pasta (ditalini, orzo, or small shells)

Seasonings & Aromatics

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • ¼ tsp red pepper flakes (optional)

  • Salt and pepper, to taste

  • 2 Tbsp fresh lemon juice

  • ¼ cup fresh parsley, chopped

Garnishes

  • Freshly grated Parmigiano-Reggiano (optional)

  • Extra virgin olive oil, for drizzling

  • Crusty Italian bread, for serving


Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook for 5–7 minutes until softened. Stir in garlic and cook for 1 minute.

  • Pour in broth. Add chicken, bay leaves, oregano, thyme, and red pepper flakes. Bring to a boil, reduce heat, cover, and simmer for 25–30 minutes.

  • Remove chicken from the pot. Cool slightly, discard skin and bones, and shred the meat with two forks.

  • Season the soup with salt and pepper. Return shredded chicken to the pot.

  • Add pasta and cook until al dente.

  • Remove bay leaves. Stir in lemon juice and parsley. Taste and adjust seasoning.

  • Serve hot with Parmesan, a drizzle of olive oil, and crusty bread.

Simmer chicken gently for rich flavor and tender meat.

Add pasta near the end to prevent mushiness.
