Juicy Pineapple Heaven Cake is a moist, fluffy cake made with crushed pineapple and topped with a light glaze. This tropical dessert is simple to make, bursting with sweet pineapple flavor, and perfect for warm days or family gatherings.
Ingredients

2 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

1 1/2 cups granulated sugar

3 large eggs

1 cup sour cream

1/2 cup vegetable oil

1 tsp vanilla extract

1 can (8 oz) crushed pineapple with juice

1 cup powdered sugar (for glaze)

2–3 tbsp pineapple juice (for glaze)
Instructions

Preheat the oven to 350°F (175°C). Grease a 9×13-inch pan or line it with parchment paper.

In a bowl, mix the flour, baking powder, and salt. Set aside.

In a large bowl, whisk the eggs and sugar until smooth.

Add sour cream, oil, and vanilla. Mix well.

Stir in the crushed pineapple with its juice.

Slowly add the dry ingredients to the wet mixture. Mix gently until just combined.

Pour the batter into the prepared pan. Spread it evenly with a spatula.

Bake for 45-55 minutes, or until the top is golden and a toothpick comes out clean.

Let the cake cool in the pan for 10-15 minutes. Then transfer it to a wire rack to cool completely.

For the glaze, mix powdered sugar with pineapple juice until smooth. Drizzle over the cooled cake.
Notes
You can use Greek yogurt instead of sour cream for a lighter version.
Add chopped nuts or shredded coconut for texture.
Use fresh pineapple, but drain it well before using.
If you prefer a stronger pineapple flavor, add more pineapple juice to the glaze.
