Description

Juicy Pineapple Heaven Cake is a moist, fluffy cake made with crushed pineapple and topped with a light glaze. This tropical dessert is simple to make, bursting with sweet pineapple flavor, and perfect for warm days or family gatherings.


Ingredients

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1 1/2 cups granulated sugar

  • 3 large eggs

  • 1 cup sour cream

  • 1/2 cup vegetable oil

  • 1 tsp vanilla extract

  • 1 can (8 oz) crushed pineapple with juice

  • 1 cup powdered sugar (for glaze)

  • 23 tbsp pineapple juice (for glaze)


Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch pan or line it with parchment paper.

  • In a bowl, mix the flour, baking powder, and salt. Set aside.

  • In a large bowl, whisk the eggs and sugar until smooth.

  • Add sour cream, oil, and vanilla. Mix well.

  • Stir in the crushed pineapple with its juice.

  • Slowly add the dry ingredients to the wet mixture. Mix gently until just combined.

  • Pour the batter into the prepared pan. Spread it evenly with a spatula.

  • Bake for 45-55 minutes, or until the top is golden and a toothpick comes out clean.

  • Let the cake cool in the pan for 10-15 minutes. Then transfer it to a wire rack to cool completely.

  • For the glaze, mix powdered sugar with pineapple juice until smooth. Drizzle over the cooled cake.

Notes

You can use Greek yogurt instead of sour cream for a lighter version.

Add chopped nuts or shredded coconut for texture.

Use fresh pineapple, but drain it well before using.

If you prefer a stronger pineapple flavor, add more pineapple juice to the glaze.
