Ingredients

Savor crispy roasted potatoes topped with seasoned meat, black beans, corn, and fresh vegetables. Each bowl delivers bold taco flavors with a satisfying mix of textures, making it a filling and comforting dinner option.

Instructions

  • Preheat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.

  • Spread the potatoes on a baking sheet and roast for 25–30 minutes, flipping halfway, until crispy and golden.

  • While the potatoes roast, cook the ground beef or turkey in a skillet over medium heat until browned, then drain excess fat.

  • Add chili powder, cumin, and chopped red onion to the skillet and cook until the onion softens.

  • Stir in the black beans and corn and cook until heated through.

  • Divide the roasted potatoes into bowls and top with the meat mixture.

  • Finish with shredded cheddar cheese, cherry tomatoes, avocado, cilantro, lime wedges, and sour cream.

Notes

Sweet potatoes can replace russet potatoes for a slightly sweeter flavor.

Substitute extra beans or tofu for a vegetarian version.

Add jalapeños or hot sauce for more heat.

Store components separately for easy meal prep.

Customize with your favorite taco toppings.
