Description

This creamy low carb chicken casserole combines tender chicken, broccoli, turkey bacon, ranch dressing, garlic, cheddar, and mozzarella. It is an easy keto-friendly family dinner that takes only 45 minutes from start to finish.


Ingredients

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 1 cup ranch dressing
  • ½ cup shredded cheddar cheese, for topping
  • ½ cup shredded mozzarella cheese, for topping
  • Nonstick cooking spray or butter, for greasing the baking dish

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
  2. Steam or blanch the broccoli until it is bright green and just tender.
  3. Drain the broccoli thoroughly and let excess moisture escape.
  4. Place the chicken, broccoli, turkey bacon, garlic, ½ cup mozzarella, ½ cup cheddar, and ranch dressing in a large bowl.
  5. Stir gently until the ranch dressing coats the ingredients evenly.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Sprinkle the remaining cheddar and mozzarella over the top.
  8. Bake uncovered for 25 to 30 minutes, until hot and bubbly.
  9. Let the casserole rest for 5 to 10 minutes before dividing it into six portions and serving.

Notes

  1. For extra creaminess, stir in a splash of heavy cream or two tablespoons of sour cream.
  2. Use rotisserie chicken to reduce preparation time.
  3. Cauliflower or roasted zucchini can replace the broccoli.
  4. Drain the broccoli thoroughly to prevent a watery casserole.
  5. Store leftovers in an airtight container in the refrigerator for up to four days.
  6. Freeze tightly wrapped portions for up to three months and thaw them in the refrigerator before reheating.
