Description

Refreshing homemade mango peach lemonade concentrate with bright citrus flavor and easy canning instructions for summer drinks.


Ingredients

Scale
  • 3 cups peaches, frozen or fresh, pits removed
  • 3 cups mangos, pits removed
  • 4 cups freshly squeezed lemon juice
  • 6 cups granulated sugar

Instructions

  1. Blend peaches and mangos in batches until smooth.
  2. Transfer the fruit puree to a stainless steel saucepan.
  3. Add lemon juice and sugar and stir well to combine.
  4. Heat the mixture over medium-high heat without boiling.
  5. Cook until the temperature reaches 190 degrees Fahrenheit.
  6. Remove from heat immediately.
  7. Ladle concentrate into sterilized jars leaving 1/4 inch headspace.
  8. Wipe rims clean and place hot lids on jars.
  9. Tighten rings finger tight.
  10. Process jars in a boiling water bath for 15 minutes.
  11. Cool jars completely before storing.
  12. Mix one part concentrate with one part water, tonic water, or ginger ale before serving.

Notes

  1. Do not boil the concentrate.
  2. Fresh lemon juice gives the best flavor.
  3. Freeze concentrate in small portions if preferred.
  4. Store opened jars in the refrigerator.
