Description

A classic marinated vegetable salad with sweet and tangy flavor that improves as it chills.


Ingredients

Scale
  • 2 cans tiny peas
  • 2 cans white shoepeg corn
  • 2 cans French-style green beans
  • 1 cup chopped celery
  • 1/2 cup chopped yellow bell pepper
  • 12 small jars pimentos
  • 46 green onions, sliced
  • 1 cup white vinegar
  • 2/3 cup oil
  • 3/4 cup sugar
  • Salt and black pepper

Instructions

  1. Drain all canned vegetables thoroughly
  2. Chop celery, bell pepper, and green onions
  3. Combine all vegetables in a large bowl
  4. Whisk vinegar, oil, sugar, salt, and pepper
  5. Pour marinade over vegetables and stir gently
  6. Cover and refrigerate at least 4 hours before serving

  1. Tastes best when chilled overnight
