Perfect for busy weeknights, casual dinners, or family “gyro bar” nights, this quick 40-minute recipe captures the heart of Mediterranean cooking—fresh, vibrant, and irresistibly delicious.

  • 4 pita breads

  • 200 g shredded lettuce

  • 500 g sliced cooked chicken (grilled or roasted)

  • 200 g cherry tomatoes, halved

  • 1 small red onion, thinly sliced

  • 100 g crumbled feta cheese

  • 120 ml tzatziki sauce

  • 15 ml olive oil

  • Fresh parsley for garnish (optional)


Instructions

  1. Warm the pita: Heat each pita in a dry skillet or oven for a few minutes until soft and pliable.

  2. Add the base: Spread about 50 g of shredded lettuce over each pita.

  3. Layer the protein: Add 125 g of grilled or roasted chicken slices on top.

  4. Top with veggies: Add halved cherry tomatoes and red onion slices.

  5. Add cheese and sauce: Sprinkle crumbled feta cheese, then drizzle about 2 tablespoons of tzatziki sauce and a small amount of olive oil.

  6. Garnish and serve: Sprinkle fresh parsley, fold or roll the pita, and serve immediately while warm.

Notes

Use soft, pocketless pita for easier folding and fewer tears.

Warm the pita—don’t toast it—to keep it flexible.

Homemade tzatziki (Greek yogurt, cucumber, garlic, lemon juice) elevates the freshness.

Marinate raw chicken in olive oil, lemon, and oregano before grilling for extra flavor.
