Description

Mediterranean Quesadillas with spinach, feta, mozzarella, tomato, and red onion create a quick vegetarian meal packed with fresh Mediterranean flavor and crispy tortillas.


Ingredients

Scale
  • 4 flour tortillas
  • 1 cup fresh spinach chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato diced
  • 1/4 cup red onion thinly sliced
  • 1 tablespoon olive oil
  • Black pepper to taste

Instructions

  1. In a mixing bowl combine mozzarella cheese feta cheese spinach tomato red onion and black pepper.
  2. Lay one tortilla flat and place one fourth of the filling on half of the tortilla then fold it over.
  3. Heat a non stick skillet over medium heat and add olive oil.
  4. Place the filled tortilla in the skillet and cook for 3 to 4 minutes until golden brown.
  5. Flip carefully and cook another 3 to 4 minutes until both sides are crispy and the cheese melts.
  6. Remove from heat slice into wedges and serve warm.

Notes

  1. Do not overfill the tortillas to prevent spilling while cooking.
  2. Cook over medium heat so the tortillas crisp while the cheese melts evenly.
  3. Serve with salad hummus or yogurt dip for extra flavor.
