Description

Quick and easy one-pan Greek vegetables. A healthy, flavorful side dish perfect for any meal.


Ingredients

Scale
  • 2 cups chopped bell peppers (mixed colors)
  • 1 large zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 3 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix all vegetables, olives, olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread evenly on a baking sheet.
  4. Roast for 25-30 minutes, stirring once halfway through.
  5. Sprinkle with feta cheese before serving if desired.
