Coated with a blend of Parmesan cheese, breadcrumbs, and seasonings, this easy-to-make dish is perfect for a weeknight dinner or a special meal. Serve it with pasta, salad, or roasted veggies for a delicious and satisfying meal.

Ingredients

Scale
For the Chicken:
  • 2 large boneless, skinless chicken breasts, halved horizontally
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
For the Coating:
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • ¾ cup grated Parmesan cheese
  • ¾ cup Italian-style breadcrumbs (or panko for extra crunch)
  • 1 tsp dried Italian seasoning
For Cooking:
  • 3 tbsp olive oil or butter for frying

Instructions

Step 1: Prepare the Chicken

  1. Slice the chicken breasts horizontally to create four thinner cutlets.
  2. Season both sides with salt, black pepper, garlic powder, and paprika.

Step 2: Set Up the Breading Station

  1. Place flour in one shallow dish.
  2. Beat eggs in a second dish.
  3. In a third dish, combine Parmesan cheese, breadcrumbs, and Italian seasoning.

Step 3: Coat the Chicken

  1. Dredge each chicken piece in flour, shaking off excess.
  2. Dip into the beaten eggs, ensuring full coverage.
  3. Coat thoroughly with the Parmesan-breadcrumb mixture, pressing gently to adhere.

Step 4: Cook the Chicken

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Cook chicken for 3-4 minutes per side, or until golden brown and crispy.
  3. Transfer to a plate and let rest for 5 minutes before serving.

Notes

  • For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
  • If you prefer baking, bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
  • Serve with marinara sauce, lemon wedges, or a side of pasta for a complete meal.
