Description

Easy Peach Bread Pudding is a rich baked dessert filled with fresh peaches, cinnamon, crunchy pecans, and homemade caramel sauce.


Ingredients

  • 8 cups cubed bread
  • 3 large eggs
  • 3 tablespoons melted butter
  • 1 cup vanilla yogurt
  • 1 cup milk
  • 2 cups granulated sugar
  • 2 tablespoons granulated sugar
  • 2 cups fresh peaches, peeled, pitted, and diced
  • 1/2 cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter
  • 1 cup heavy cream
  • 1 cup brown sugar
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease a 9×13-inch baking dish.
  2. Whisk eggs, melted butter, yogurt, and milk in a large bowl.
  3. Slowly stir in sugar until dissolved.
  4. Fold in peaches and bread cubes until evenly coated.
  5. Allow mixture to rest for 30 minutes.
  6. Mix cinnamon and remaining sugar in a small bowl.
  7. Pour mixture into baking dish and sprinkle with cinnamon sugar.
  8. Cover loosely with buttered foil and bake for 20 minutes.
  9. Remove foil, add pecans, and bake another 20 to 25 minutes until golden.
  10. Combine butter, heavy cream, and brown sugar in a saucepan over medium-low heat.
  11. Bring sauce to a boil, reduce heat, and simmer for 5 minutes until thickened.
  12. Serve warm with caramel sauce and vanilla ice cream.
