Description

Crispy Peach Cobbler Egg Rolls filled with warm cinnamon peaches and served with creamy vanilla bean sauce.


Ingredients

  • 2 cups chopped peaches
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons salted butter
  • 1/2 cup light brown sugar
  • 4 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 10 egg roll wrappers
  • 2 tablespoons water
  • Vegetable oil for frying
  • Powdered sugar for dusting
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla bean paste
  • 2 to 3 tablespoons milk
  • Pinch of salt

Instructions

  1. Combine peaches, lemon juice, butter, brown sugar, cornstarch, and cinnamon in a saucepan.
  2. Cook until thickened, then stir in vanilla extract and cool completely.
  3. Place filling into egg roll wrappers and seal with water.
  4. Heat oil to 350 degrees Fahrenheit.
  5. Fry egg rolls until golden brown and crispy.
  6. Drain on a wire rack and dust with powdered sugar.
  7. Whisk powdered sugar, milk, vanilla bean paste, and salt to make dipping sauce.
  8. Serve warm with vanilla bean sauce.

Notes

  1. Use canned peaches if fresh peaches are unavailable.
  2. Air fry at 380 degrees Fahrenheit for 15 minutes if preferred.
  3. Use vegan butter and vegan wrappers for a vegan dessert option.
  4. Store leftovers in the refrigerator for up to 3 days.
