Description

Peach Raspberry Crumb Bars are buttery dessert bars filled with juicy peaches and raspberries layered over a golden crumble crust.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup oats
  • ½ cup brown sugar
  • ½ cup sliced almonds
  • 6 oz unsalted butter
  • 2 medium peaches peeled and sliced
  • ¾ cup raspberries
  • Juice of ½ lemon
  • 2 teaspoons vanilla extract
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F and line an 8-inch square pan
  2. Mix flour oats brown sugar and almonds then cut in butter until crumbly
  3. Press half of the mixture into the pan and bake for 15 minutes
  4. Mix peaches raspberries lemon juice and vanilla extract
  5. Combine sugar flour and salt then gently mix with fruit
  6. Layer fruit over crust leaving excess liquid behind
  7. Sprinkle remaining crumble mixture on top
  8. Bake for 35 to 40 minutes until golden brown
  9. Cool completely before slicing into bars

Notes

  1. Do not add excess fruit liquid to avoid soggy bars
  2. Let bars cool fully before cutting
  3. Store in airtight container at room temperature or refrigerate if warm climate
