- 3 ripe peaches, sliced
- 1 English cucumber, thinly sliced
- 1/2 cup fresh mint leaves, chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon honey, optional
- Pinch of sea salt
- 1/3 cup crumbled feta cheese, optional
Instructions
- Cut the watermelon into bite-size cubes and place it in a large mixing bowl.
- Slice the peaches into wedges or thin slices, then add them to the bowl.
- Thinly slice the English cucumber and add it to the fruit.
- Chop the fresh mint leaves and scatter them over the watermelon, peaches, and cucumber.
- Whisk the lime juice, honey, and sea salt in a small bowl until smooth.
- Drizzle the dressing over the fruit mixture.
- Toss gently until the fruit and cucumber receive a light coating.
- Sprinkle crumbled feta cheese over the top, if using.
- Serve chilled or at room temperature.
Notes
- For make-ahead prep, keep the dressing separate and toss it with the fruit just before serving to prevent excess liquid.
- Use ripe but firm peaches so they hold their shape.
