Description

- 1 store-bought 9-inch deep-dish pie crust
- 1 cup Palmetto Cheese
- 1/2 cup Parmesan cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup mayonnaise
- 1/2 cup green onions, sliced
- 1/4 cup fresh basil, chopped
- 2–3 cups tomatoes, sliced or diced
- A few dashes hot sauce
- Salt and black pepper to taste
Instructions
- Preheat oven to 350°F.
- Pierce pie crust with a fork and par-bake for 5-10 minutes.
- Mix pimento cheese, Parmesan, Monterey Jack, mayonnaise, hot sauce, salt, and pepper.
- Spread a thin layer of cheese mixture in the crust.
- Layer tomatoes, basil, and green onions.
- Repeat layers and finish with remaining cheese mixture.
- Bake at 325°F for 25-40 minutes until golden and bubbly.
- Rest for 15 minutes before slicing and serving.
Notes
- Pat tomatoes dry before layering to reduce moisture.
- Use local ripe tomatoes for best flavor.
- Allow pie to rest before cutting for cleaner slices.
