Description

Classic Southern tomato pie layered with pimento cheese, fresh tomatoes, basil, green onions, and a flaky crust.


Ingredients

Scale
  • 1 store-bought 9-inch deep-dish pie crust
  • 1 cup Palmetto Cheese
  • 1/2 cup Parmesan cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup mayonnaise
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh basil, chopped
  • 23 cups tomatoes, sliced or diced
  • A few dashes hot sauce
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Pierce pie crust with a fork and par-bake for 5-10 minutes.
  3. Mix pimento cheese, Parmesan, Monterey Jack, mayonnaise, hot sauce, salt, and pepper.
  4. Spread a thin layer of cheese mixture in the crust.
  5. Layer tomatoes, basil, and green onions.
  6. Repeat layers and finish with remaining cheese mixture.
  7. Bake at 325°F for 25-40 minutes until golden and bubbly.
  8. Rest for 15 minutes before slicing and serving.

Notes

  1. Pat tomatoes dry before layering to reduce moisture.
  2. Use local ripe tomatoes for best flavor.
  3. Allow pie to rest before cutting for cleaner slices.
