Description

Sweet and salty grilled chicken skewers made with marinated chicken thighs and fresh pineapple chunks. These Pineapple Chicken Kebabs deliver juicy texture and caramelized flavor perfect for outdoor grilling.


Ingredients

  • 3.54 lbs boneless skinless chicken thighs
  • 1 pineapple
  • 1 cup pineapple juice
  • 1/2 cup low sodium soy sauce
  • 6 garlic cloves
  • 1 small onion
  • 2 tbsp white wine vinegar
  • 2 tbsp brown sugar

Instructions

  1. Cut the pineapple by removing the top and bottom, trimming the skin, removing the core, and cutting the flesh into 1-inch chunks.
  2. Store pineapple chunks in a sealed container in the refrigerator until ready to use.
  3. Combine pineapple juice, soy sauce, white wine vinegar, garlic, sliced onion, and brown sugar in a bowl and whisk well.
  4. Cut chicken thighs in half, place them in a zip-lock bag, pour the marinade over the chicken, seal the bag, and refrigerate for at least 2 hours or overnight.
  5. Preheat the grill and prepare skewers by alternating two pieces of chicken with one piece of pineapple.
  6. Spray skewers lightly with cooking oil and place them on the grill.
  7. Cook the skewers while turning every 4–5 minutes until the chicken reaches an internal temperature of 165°F.
  8. Simmer leftover marinade until reduced by half and brush it over the cooked kebabs before serving.

Notes

  1. Marinate chicken for at least 2 hours for best flavor but not longer than 12 hours.
  2. Store leftovers in an airtight container in the refrigerator for 3–4 days.
  3. Reheat gently in a skillet over medium heat for best texture.
