- 1 pineapple
- 1 cup pineapple juice
- 1/2 cup low sodium soy sauce
- 6 garlic cloves
- 1 small onion
- 2 tbsp white wine vinegar
- 2 tbsp brown sugar
Instructions
- Cut the pineapple by removing the top and bottom, trimming the skin, removing the core, and cutting the flesh into 1-inch chunks.
- Store pineapple chunks in a sealed container in the refrigerator until ready to use.
- Combine pineapple juice, soy sauce, white wine vinegar, garlic, sliced onion, and brown sugar in a bowl and whisk well.
- Cut chicken thighs in half, place them in a zip-lock bag, pour the marinade over the chicken, seal the bag, and refrigerate for at least 2 hours or overnight.
- Preheat the grill and prepare skewers by alternating two pieces of chicken with one piece of pineapple.
- Spray skewers lightly with cooking oil and place them on the grill.
- Cook the skewers while turning every 4–5 minutes until the chicken reaches an internal temperature of 165°F.
- Simmer leftover marinade until reduced by half and brush it over the cooked kebabs before serving.
Notes
