Description

Pineapple chipotle salsa is a bold and flavorful condiment that combines the sweetness of fresh pineapple with the smoky heat of chipotle peppers. Perfect for tacos, grilled meats, or as a dip, this salsa adds a refreshing, spicy twist to your dishes.


Ingredients

  • 1 fresh pineapple, peeled, cored, and chopped

  • 1 to 2 chipotle peppers in adobo sauce (adjust to taste)

  • 1 tablespoon adobo sauce (from chipotle pepper can)

  • 2 tomatillos, husked and chopped (or substitute with green tomatoes)

  • ½ small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons fresh lime juice

  • Zest of 1 lime

  • ¼ cup fresh cilantro, chopped (optional)

  • Salt and pepper to taste

  • Optional: 1 tablespoon honey (if pineapple is not sweet enough)

  • Optional: 1 small mango or papaya, diced for extra sweetness


Instructions

  • Preheat your oven to broil.

  • Place the pineapple, tomatillos, onion, and garlic on a baking sheet. Broil for 5–7 minutes, turning occasionally until lightly charred.

  • Transfer the roasted ingredients to a blender or food processor. Add the chipotle peppers and adobo sauce. Blend to your desired consistency (chunky or smooth).

  • Pour the salsa into a bowl. Add lime juice, lime zest, cilantro (if using), salt, and pepper. Stir well.

  • Taste and adjust seasonings. Add honey for sweetness if needed.

  • Let the salsa rest in the fridge for at least 30 minutes to allow flavors to meld. Serve chilled.

Notes

For milder salsa, use only one chipotle pepper.

You can make the salsa ahead of time — it keeps well for up to 5-7 days in the fridge.

If you prefer a sweeter salsa, add diced mango or papaya.
