Description

Moist homemade pumpkin bread made with pure pumpkin, brown sugar, neutral oil, and fragrant pumpkin spice. This easy recipe makes two tender loaves with lightly crisp sugared edges.


Ingredients

  • Oil or baking spray, for greasing the pans
  • 3 tablespoons granulated sugar, divided
  • 1 can (15 ounces or 425 grams) pumpkin puree
  • 4 large eggs, at room temperature
  • 1 cup neutral oil
  • 1 tablespoon vanilla extract or bourbon
  • 1 1/2 cups granulated sugar
  • 1 cup packed dark brown sugar
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon fine salt
  • 2 tablespoons pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F.
  2. Grease two 9-by-5-inch loaf pans with oil or baking spray.
  3. Sprinkle 1 tablespoon of sugar inside each pan, then tilt the pans to coat the bottoms and sides.
  4. Whisk the pumpkin puree, eggs, oil, vanilla or bourbon, granulated sugar, and dark brown sugar in a large bowl until smooth.
  5. Whisk the flour, baking soda, baking powder, salt, and pumpkin pie spice in a separate medium bowl.
  6. Slowly add the dry ingredients to the wet ingredients while whisking gently.
  7. Once most of the flour has blended in, stir the batter for about 50 strokes, scraping the bottom and sides of the bowl.
  8. Divide the batter evenly between the prepared loaf pans and smooth the tops.
  9. Sprinkle the remaining tablespoon of sugar evenly over both loaves.
  10. Bake for 60 to 65 minutes, or until a toothpick or skewer inserted into the center comes out clean or with a few moist crumbs.
  11. Carefully turn the loaves onto a cooling rack.
  12. Cool completely before slicing and serving.

Notes

  1. Use pure pumpkin puree rather than pumpkin pie filling.
  2. If the pumpkin puree looks watery, simmer it over medium-high heat until some excess moisture evaporates, then cool it slightly.
  3. Use fresh pumpkin spice for the strongest flavor.
  4. Avoid overmixing the batter after adding the flour.
  5. The bread develops deeper flavor and slices more cleanly on the following day.
  6. Wrap cooled bread tightly and store it at room temperature for up to four days or freeze it for up to three months.
