Description

Pumpkin Whipped Cottage Cheese is a quick, healthy pumpkin dessert that doubles as a high-protein snack. Ready in just five minutes, this creamy blend of cottage cheese, pumpkin purée, maple syrup, and warm spices is cozy, nutritious, and naturally gluten-free. Perfect for busy evenings, school nights, or when you want a guilt-free indulgence with autumn vibes.

Ingredients

Scale
  • 2 cups (475 g) cottage cheese

  • 1 cup (240 g) pumpkin purée

  • ¾ teaspoon (1.5 g) pumpkin spice (or up to 1 tsp/2 g, to taste)

  • 2 tablespoons (30 ml) maple syrup or honey (adjust sweetness as desired)

  • Optional toppings: whipped cream, pumpkin seeds, hemp hearts, shredded coconut, mini chocolate chips, crushed or candied pecans

Instructions

  • Add cottage cheese, pumpkin purée, pumpkin spice, and maple syrup to a small food processor.

  • Blend until creamy and smooth, about 1–2 minutes.

  • Taste and adjust sweetness or spice as desired.

  • Serve immediately with toppings of your choice, or chill for up to 2 days.

Notes

Use a small food processor or personal blender for best results; heavy-duty blenders may make the mixture watery.

Adjust sweetness depending on whether you want a snack or dessert.

For extra fluffiness, chill the pumpkin purée before blending.

Store leftovers in an airtight container in the fridge for up to 2 days. Stir before serving again.
