Description

Moist pumpkin zucchini bread made with pumpkin puree, shredded zucchini, applesauce, warm spices, and optional chocolate chips or nuts. This easy recipe makes two cozy loaves for breakfast, snacks, or freezing.

  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1/2 cup butter, melted
  • 1/2 cup applesauce
  • 1 tablespoon vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 to 2 cups shredded zucchini, squeezed dry
  • 1 cup chocolate chips, optional
  • 1 cup chopped walnuts or pecans, optional

Instructions

  1. Preheat the oven to 350°F.
  2. Grease and flour two standard loaf pans.
  3. Shred the zucchini, then squeeze it dry with a clean kitchen towel or paper towels.
  4. In a large bowl, combine the eggs, white sugar, and brown sugar until smooth.
  5. Add the pumpkin puree, melted butter, applesauce, and vanilla extract, then mix until combined.
  6. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  7. Slowly add the dry ingredients to the wet mixture and stir just until combined.
  8. Fold in the squeezed zucchini by hand until evenly mixed.
  9. Fold in chocolate chips, chopped walnuts, or pecans, if using.
  10. Divide the batter evenly between the two prepared loaf pans.
  11. Bake for 45 to 50 minutes, or until a tester inserted into the center comes out clean.
  12. Cool the bread in the pans for 5 to 10 minutes, then transfer the loaves to a wire rack to cool.

Notes

  1. Serve warm slices with butter for a cozy treat.
  2. Chocolate chips work well in one loaf if you want one plain loaf and one sweeter loaf.
  3. Add chopped walnuts or pecans after folding in the zucchini if you like crunch.
  4. Store the bread covered with a tea towel rather than sealed in plastic for the best texture.
  5. Freeze a cooled loaf wrapped in plastic and placed in a zip-top bag for up to 3 months. Thaw on the counter and toast slices with butter before serving.
