These Rainbow Roll-Ups are a fresh, vibrant, and satisfying detox-friendly lunch packed with crisp veggies, creamy curry hummus, and a bold peanut dipping sauce. Wrapped in tender collard greens, they deliver flavor, color, and crunch without sacrificing nutrition or satisfaction. Great for meal prep, parties, or a quick healthy lunch.

For the Roll-Ups:

  • 1 medium carrot, matchstick cut

  • 1 medium cucumber, matchstick cut

  • 1/2 small red cabbage, finely shredded

  • 6 tbsp curry hummus (approx. 2 tbsp per roll-up)

  • 1 1/2 cups cooked rice or quinoa (optional, 1/4 cup per roll-up)

  • 6 tbsp chopped peanuts (1 tbsp per roll-up)

  • Fresh cilantro leaves

  • 6 large collard green leaves

For the Peanut Sauce:

  • 3/4 cup peanut butter (180 g)

  • 1/4 cup soy sauce or tamari (60 ml)

  • 1/4 cup rice vinegar (60 ml)

  • 1/4 cup water (60 ml)

  • 2 tbsp honey (30 g)

  • 1 clove garlic


Instructions

  1. Prep Your Veggies: Slice carrots and cucumber into matchsticks. Shred cabbage. Chop peanuts.

  2. Prepare Collard Leaves: Wash and trim stems. Soften by steaming, blanching, or placing warm rice on top.

  3. Assemble Roll-Ups: Spread 2 tbsp curry hummus down the center of each leaf. Add veggies, rice or quinoa, cilantro, and peanuts.

  4. Roll: Fold in the sides and roll tightly from the bottom up. Secure with a toothpick if needed.

  5. Make the Peanut Sauce: Blend peanut butter, soy sauce, rice vinegar, water, honey, and garlic in a food processor until smooth.

  6. Serve: Enjoy roll-ups fresh with a side of the peanut dipping sauce.

Notes

Substitute collards with romaine, chard, or nori sheets.

Add sriracha to the sauce for a spicy kick.

For a low-carb version, skip rice or quinoa.

Use sunflower seed butter and omit peanuts for a nut-free version.
