Description

This Copycat Costco Chicken Bake brings the delicious flavors of the famous food court favorite right to your kitchen! A soft, golden-brown dough is stuffed with tender rotisserie chicken, crispy bacon, gooey mozzarella, and a creamy Caesar dressing, then baked to perfection. Perfect for a quick meal or a grab-and-go snack, these homemade chicken bakes taste just like the real thing—maybe even better!

Ingredients

Scale
For the Dough (or use store-bought pizza dough)
  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 packet (2 ¼ tsp) instant yeast
  • ¾ cup warm water
  • 2 tbsp olive oil
For the Filling:
  • 2 cups rotisserie chicken, shredded
  • ½ cup cooked bacon, crumbled
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • ½ cup Caesar dressing
  • ½ tsp garlic powder
  • ½ tsp black pepper
For the Topping:
  • 1 egg, beaten (for egg wash)
  • ¼ cup Parmesan cheese

Instructions

  • Make the Dough (Skip if Using Store-Bought):

    • In a large mixing bowl, combine flour, salt, sugar, and yeast.
    • Add warm water and olive oil, then mix until a dough forms.
    • Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.
    • Place the dough in a greased bowl, cover, and let it rise for 1 hour, or until doubled in size.
  • Prepare the Filling:

    • In a bowl, mix shredded chicken, bacon, mozzarella, Parmesan, Caesar dressing, garlic powder, and black pepper until well combined.
  • Assemble the Chicken Bakes:

    • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Roll out the dough into 6-inch by 10-inch rectangles.
    • Spoon a generous amount of the chicken mixture onto one side of each rectangle.
    • Fold the dough over the filling and pinch the edges to seal. Place seam-side down on the baking sheet.
  • Bake the Chicken Bakes:

    • Brush the tops with egg wash and sprinkle with Parmesan cheese.
    • Bake for 20-25 minutes, or until golden brown and crispy.
  • Serve & Enjoy:

    • Let cool for a few minutes, then serve warm with extra Caesar dressing or marinara sauce for dipping.

Notes

  • For a shortcut, use store-bought pizza dough instead of homemade.
  • These chicken bakes can be frozen before baking for easy meal prep. Just bake from frozen at 375°F for about 30 minutes.
  • Feel free to customize with ranch dressing instead of Caesar, or add spinach or mushrooms for extra flavor.
