Description

Red velvet macarons with crisp cocoa-kissed shells filled with a light, creamy mascarpone frosting, shaped into hearts for a festive dessert.

Ingredients

Scale
  • 130 g powdered sugar
  • 120 g almond flour
  • 7 g cocoa powder
  • 105 g egg whites
  • 100 g granulated sugar
  • 1 teaspoon vanilla paste
  • ½ teaspoon red food gel
  • 113 g heavy cream, cold
  • 50 g granulated sugar
  • 113 g mascarpone cheese, cold
  • ½ teaspoon vanilla paste

Instructions

  1. Prepare a heart-shaped macaron template on parchment paper.
  2. Sift powdered sugar, almond flour, and cocoa powder twice.
  3. Heat egg whites and granulated sugar over a double boiler until dissolved and warm.
  4. Whip mixture into a meringue, adding vanilla and red food gel, until stiff peaks form.
  5. Fold in dry ingredients gently until batter flows smoothly and forms figure eights.
  6. Pipe heart shapes, tap the tray to release air bubbles, and rest until dry.
  7. Bake at 300°F for about 12 minutes and cool completely.
  8. Whip cream, sugar, mascarpone, and vanilla until thick.
  9. Pipe frosting onto shells and sandwich together.

Notes

  1. Macaron shells develop better flavor after resting overnight in the refrigerator.
  2. If shells stick to parchment, freeze briefly to release easily.
