Description
Rhubarb Lemonade is a tangy and sweet refreshing summer drink made from a simple homemade concentrate with fresh rhubarb and lemon.
Ingredients
Scale
- 3 cups rhubarb, chopped
- 2 large lemons, juiced and zested
- 1.5 cups granulated sugar
- 3 cups water
Instructions
- Wash and chop rhubarb into 1/2-inch pieces and discard leaves
- Zest and juice lemons, then strain juice and combine with rhubarb
- Combine water, sugar, rhubarb mixture, and zest in a saucepan and bring to a boil
- Cook for 20 minutes until rhubarb softens and breaks down
- Mash mixture and let cool for 10 minutes
- Strain into a bowl to create concentrate
- Mix 1 part concentrate with 3 parts water to serve
Notes
- Discard rhubarb leaves as they are poisonous
- Strain mixture for a smooth texture
- Freeze concentrate up to 6 months
- Use a 3:1 water to concentrate ratio when serving
