Ingredients

- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon maple syrup or brown sugar
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic crushed
- 1/2 teaspoon kosher salt
- 2 teaspoons Tajin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 4 salmon fillets 4 to 6 ounces each
- 1 large ripe avocado diced
- 1 large mango diced
- 1/2 red bell pepper diced
- 2 tablespoons cilantro chopped
- 1/2 jalapeño minced
- 1/4 cup red onion diced
- 2 tablespoons fresh lime juice
- 1/2 teaspoon kosher salt
Instructions
- Whisk together soy sauce olive oil maple syrup lime juice garlic and spices in a bowl
- Add salmon fillets and coat evenly then marinate in the refrigerator for at least 20 minutes
- Dice mango avocado red bell pepper jalapeño and red onion then mix with cilantro lime juice and salt to make salsa
- Preheat grill to medium high heat around 400 to 450 degrees F and oil the grates
- Remove salmon from marinade and shake off excess
- Place salmon skin side down on grill and cook for 7 to 9 minutes flipping halfway through
- Cook until internal temperature reaches 135 to 140 degrees F then remove and rest
- Serve salmon topped with mango salsa immediately
Notes
- Do not over marinate the salmon to prevent mushy texture
- Use ripe mango for best sweetness and flavor
- You can bake salmon at 400 degrees F for 12 to 15 minutes instead of grilling
- Add extra lime juice before serving for brighter flavor
