Description

Simple Tomato Feta Cucumber Salad is a refreshing Mediterranean-inspired side dish featuring juicy cherry tomatoes, crisp cucumber, creamy feta, and a zesty oregano vinaigrette. Ready in just 10 minutes, it’s the perfect light and flavorful complement to grilled dishes, picnics, or weeknight meals.

Ingredients

Scale
  • 1 English cucumber, diced

  • 2 pints (680 g) grape or cherry tomatoes, halved

  • 8 oz (225 g) feta cheese, diced

  • ¼ cup (15 g) chopped parsley

  • ¼ cup (60 ml) olive oil

  • 2 tbsp (30 ml) red wine vinegar

  • 2 garlic cloves, minced

  • 1 tsp dried oregano

  • 1 tsp salt

  • ½ tsp black pepper

Instructions

  • Dice the cucumber, halve the tomatoes, and cube the feta. Chop the parsley.

  • Combine cucumber, tomatoes, feta, and parsley in a large bowl.

  • In a separate small bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper.

  • Pour the vinaigrette over the salad. Toss gently to coat.

  • Serve immediately or chill for 10–15 minutes for extra refreshment.

Notes

Use fresh, ripe tomatoes for the best sweetness and bite.

If prepping in advance, wait to add feta and dressing until just before serving.

Add crushed red pepper flakes for a kick, or cooked orzo to make it a main dish.

For a dairy-free version, omit feta or use a plant-based alternative.

Keeps well for up to 5 days in the fridge, though tomatoes may soften slightly.
