Description

Soft Pretzel Bites are chewy, golden, bite-sized pretzels made from soft dough and finished with a classic baking soda bath, perfect for dipping and sharing.


Ingredients

Scale
  • 1 ½ cups warm water
  • 2 ¼ teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 ½ teaspoons salt
  • 2 tablespoons unsalted butter, melted
  • 10 cups water
  • ⅔ cup baking soda
  • 1 egg yolk
  • 1 tablespoon water
  • Coarse sea salt or pretzel salt

Instructions

  1. Combine warm water and sugar, then bloom yeast until foamy
  2. Add butter, salt, and flour and knead until smooth
  3. Let dough rise until doubled in size
  4. Bring water and baking soda to a boil
  5. Divide dough, roll into ropes, and cut into bites
  6. Boil bites for 30 seconds and drain
  7. Brush with egg wash and sprinkle with salt
  8. Bake until deep golden brown

  2. Reheat leftovers in the oven for best texture
