A fresh summer corn salad with avocado, tomatoes, lime, and cilantro. Quick, healthy, and perfect for any summer meal.
Ingredients

- 4 corn cobs (3–4 cups kernels)
- 1 cup cherry tomatoes, halved
- 1/3 small red onion, chopped
- 2 tbsp cilantro, chopped
- Juice of 3–4 limes
- 1–2 avocados, diced
- Salt to taste
- Black pepper to taste
Instructions
- Boil water and cook corn for 1½ to 2 minutes
- Cool corn and cut kernels off cob
- Chop tomatoes, onion, and cilantro
- Mix corn, vegetables, and lime juice in a bowl
- Season with salt and pepper
- Chill if desired
- Top with diced avocado before serving

- Chill salad for 1 hour for better flavor
- Add avocado just before serving
