Description

This Sweet Barbeque Chicken Sandwich is a café-worthy creation made with smoky grilled veggies, creamy hummus, melty cheddar, and tender honey barbeque chicken, all layered inside toasty ciabatta. Quick to prepare yet packed with flavor, it’s perfect for busy weeknights, casual lunches, or even entertaining friends.


Ingredients

  • 30 ml (2 tbsp) olive oil, plus extra for brushing

  • 4 slices eggplant

  • 1 red bell pepper, seeded and quartered

  • 1 zucchini, thinly sliced lengthwise

  • ¼ red onion, thinly sliced

  • 1 ciabatta loaf, sliced lengthwise

  • 90 g (6 tbsp) Sweet Barbeque Hummus

  • 115 g (4 oz) Vermont yellow cheddar cheese, thinly sliced

  • 225 g (8 oz) Sweet B’s® Honey Barbeque Glazed Chicken Breast, sandwich cut


Instructions

  1. Preheat grill or grill pan to medium heat and brush lightly with olive oil.

  2. Grill eggplant, bell pepper, zucchini, and onion slices for 3–5 minutes per side until tender and charred.

  3. Slice ciabatta loaf lengthwise and spread 3 tbsp hummus on each half.

  4. On the bottom half, layer cheddar cheese, grilled eggplant, bell pepper, zucchini, onion, and chicken.

  5. Top with the other half of the ciabatta and brush the outside with olive oil.

  6. Slice into portions and serve warm.

Notes

Place cheese first so it melts under the heat of the veggies.

Ciabatta works best for sturdiness; if using regular sandwich bread, toast first.

Brush bread with oil lightly—just enough for crispiness.

Swap cheddar with provolone or pepper jack for flavor variation.

For a vegetarian version, skip the chicken and add portobello mushrooms.
