Description

A hearty Tex-Mex skillet with seasoned ground beef, tender sweet potatoes, corn, poblano pepper, and melted cheese cooked in one pan for a quick family dinner.


Ingredients

  • 1 lb ground beef
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 3 cups sweet potatoes, cubed
  • 2 tablespoons taco seasoning
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, seeded and diced
  • 1 cup shredded cheese (cheddar, Mexican blend, or queso asadero)
  • Cilantro for serving (optional)
  • Avocado for serving (optional)
  • Sour cream for serving (optional)

Instructions

  1. Heat a large nonstick skillet over medium heat and cook the ground beef with diced onion for about 10 minutes until browned
  2. Drain excess fat from the skillet
  3. Add minced garlic, cubed sweet potatoes, taco seasoning, water, corn, and diced poblano pepper
  4. Stir well to combine the ingredients and cover the skillet
  5. Cook for 12 to 15 minutes, stirring occasionally, until the sweet potatoes are fork tender
  6. Remove the lid and cook for another 3 to 5 minutes to allow the liquid to evaporate
  7. Sprinkle shredded cheese over the skillet and let it melt
  8. Serve warm with optional toppings such as cilantro, avocado, or sour cream

Notes

  1. Cut sweet potatoes into evenly sized cubes so they cook at the same rate
  2. Lean ground beef helps reduce excess grease in the skillet
  3. Add lime juice or fresh cilantro before serving for extra flavor
  4. Leftovers store well in the refrigerator for up to 4 days
