Description

Texas Roadhouse Rattlesnake Bites are spicy, cheesy, and crispy appetizers. Each bite is filled with jalapeños and melted cheese, then coated in seasoned breading and fried until golden. They’re served with a creamy Cajun dipping sauce and are perfect for sharing at parties or enjoying as a bold-flavored snack.

Ingredients

Scale
  • 1 cup shredded Pepper Jack cheese

  • 1 cup shredded sharp cheddar cheese

  • 1/4 cup diced jalapeños (fresh or pickled)

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1/4 cup milk

  • 1 1/2 cups seasoned breadcrumbs

  • 1/2 tsp cayenne pepper

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

  • 1/4 tsp salt

  • Vegetable or canola oil (for frying)

Cajun Dipping Sauce (optional):

  • 1/2 cup mayonnaise

  • 2 tbsp sour cream

  • 1 tbsp ketchup

  • 1 tsp prepared horseradish

  • 1/4 tsp cayenne pepper

Instructions

  • Mix the filling: In a bowl, combine both cheeses and diced jalapeños.

  • Shape: Roll into small balls, about 1.5 inches wide.

  • Freeze: Place on a baking sheet and freeze for 30 minutes.

  • Prepare breading stations:

    • Bowl 1: Flour

    • Bowl 2: Whisked eggs and milk

    • Bowl 3: Breadcrumbs mixed with cayenne, paprika, garlic powder, and salt

  • Coat the bites: Roll each frozen ball in flour, then egg, then breadcrumbs.

  • Heat oil: Heat oil to 350°F (175°C).

  • Fry: Fry bites in small batches for 3–4 minutes until golden brown.

  • Drain: Place on paper towels to remove excess oil.

  • Serve: Serve hot with Cajun dipping sauce or your favorite alternative.

Notes

You can make these ahead of time and freeze them before frying.

Adjust the heat by adding more or fewer jalapeños.

For a lighter version, try air frying or baking instead.

Use vegetarian-friendly breadcrumbs if needed.
