Ingredients

Scale
  • 4 boneless, skinless chicken thighs
  • 1/4 cup fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon lime juice
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon paprika
  • 1 large egg
  • Vegetable oil for frying
  • 1/2 cup mayo
  • 2 tablespoons sriracha
  • 1 tablespoon lime juice
  • 1 cup shredded cabbage
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 23 pickled radishes (optional)
  • 4 brioche buns

Instructions

  1. 1. Marinate the chicken thighs in fish sauce, soy sauce, brown sugar, garlic, ginger, and lime juice for at least 1 hour.
  2. 2. In a shallow bowl, combine flour, cornstarch, paprika, and a pinch of salt.
  3. 3. In another bowl, beat the egg.
  4. 4. Dip each marinated chicken thigh in the egg wash, then coat with the flour mixture.
  5. 5. Heat oil in a deep skillet to 350°F (175°C). Fry chicken for 6-8 minutes or until golden and crispy.
  6. 6. In a small bowl, mix mayo, sriracha, and lime juice to create chili mayo.
  7. 7. Toast the brioche buns and spread a layer of chili mayo on the bottom half of each bun.
  8. 8. Place the crispy chicken on the buns, top with slaw, cilantro, mint, and pickled radishes.
  9. 9. Assemble the sandwich and serve immediately.

Notes

  1. For a gluten-free version, use rice flour or gluten-free all-purpose flour.
  2. If you prefer a lighter option, try air-frying the chicken instead of deep-frying.
