Description

Ingredients

  • 12 tbsp olive oil

  • 1 large onion, diced (or 2 shallots/leeks)

  • 2 cups chopped celery

  • 2 tbsp fresh ginger, chopped

  • 48 garlic cloves, roughly chopped

  • 4 cups chicken broth or stock

  • 2 cups water

  • 1 tsp salt (adjust to taste)

  • 2 bay leaves

  • 1/4 tsp white pepper

  • 1.5 lbs chicken thighs, boneless & skinless (or breasts)

  • Fresh lemon juice (to taste)

  • Pinch of chili flakes (optional)

  • Scallions, cilantro, or Italian parsley (for garnish)

  • Drizzle of toasted sesame oil (optional)

  • Optional veggies: carrots, extra celery, mushrooms

  • Optional base: cooked noodles, rice, or grains of choice


Instructions

  • Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add diced onion, celery, garlic, and ginger. Sauté for 3-4 minutes until fragrant. Reduce heat and cook another 3-4 minutes until soft and golden.

  • Build the broth: Add chicken broth, water, salt, white pepper, and bay leaves. Place chicken thighs into the pot.

  • Simmer: Bring to a gentle boil, then reduce to a simmer. Cover and cook for 20 minutes (check breasts at 15 mins).

  • Shred and return chicken: Remove chicken, shred into bite-sized pieces, and return to pot. Simmer for another 5 minutes.

  • Brighten with lemon: Squeeze in fresh lemon juice to taste. Adjust seasoning if needed.

  • Serve & garnish: Ladle into bowls over rice, noodles, or as-is. Garnish with scallions, cilantro, or parsley. Optional drizzle of sesame oil and chili flakes.

Notes

Add extra ginger for a spicier kick.

Customize with any veggies on hand like carrots, mushrooms, or spinach.

For keto-friendly version, skip noodles/rice and load up on greens.
