Description

TikTok Lasagna Soup transforms all the hearty, cheesy comfort of traditional lasagna into a rich, cozy soup that comes together in one pot. Loaded with ground beef, broken lasagna noodles, and a trio of cheeses, this viral favorite delivers Italian comfort food flavors in an easy-to-make, slurpable form that’s perfect for chilly nights and family dinners.


Ingredients

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 34 garlic cloves, minced

  • 1 lb lean ground beef

  • 1.5 tbsp Italian seasoning

  • 1 tsp salt

  • 0.5 tsp black pepper

  • 1 tbsp tomato paste

  • 4 cups beef broth

  • 24 oz marinara sauce

  • 14.5 oz canned diced tomatoes (with juices)

  • 1/4 cup water

  • 10 oz lasagna noodles, broken in half

  • 1 ½ cups cottage cheese

  • 1/2 cup shaved parmesan

  • 1/2 cup shredded mozzarella

  • 1 cup spinach, chopped

Optional Garnish:

  • 1/2 cup cottage cheese

  • 2 tbsp chopped fresh basil


Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onion and garlic for 3–4 minutes until softened.

  • Add ground beef and cook for 4–6 minutes, breaking it up until browned.

  • Stir in Italian seasoning, salt, pepper, and tomato paste.

  • Pour in beef broth, marinara sauce, diced tomatoes, and water. Mix well.

  • Add broken lasagna noodles and bring to a boil.

  • Cover and simmer for 12–15 minutes until noodles are tender.

  • Stir in cottage cheese, parmesan, mozzarella, and spinach. Simmer until cheese melts and spinach wilts.

  • Serve hot, garnished with extra cottage cheese and fresh basil if desired.

Notes

Substitute ground turkey or Italian sausage for beef if preferred.

Ricotta can be used instead of cottage cheese.

Add broth while reheating to maintain soup texture.

Freeze without cheese and spinach for better texture upon reheating.

For vegetarian version, use lentils or mushrooms and vegetable broth.
