Description

Easy egg-filled Tomato Basil Caprese Quiche bursting with tomato flavor, basil, mozzarella, and a creamy custard filling.


Ingredients

  • 1 (9-inch) deep dish pie crust, thawed
  • 1/2 cup Parmesan cheese, divided
  • 1/4 cup cooked spinach, drained
  • 1 cup mozzarella cheese
  • 1520 basil leaves, chopped
  • 1 large tomato, seeded and sliced
  • 6 eggs
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Sprinkle 1/4 cup Parmesan cheese into the pie crust.
  3. Add spinach, mozzarella cheese, and chopped basil.
  4. Arrange tomato slices over the basil mixture.
  5. Sprinkle remaining Parmesan cheese over tomatoes.
  6. Whisk eggs, milk, cream, garlic, salt, and pepper.
  7. Pour egg mixture into the crust.
  8. Place quiche on a baking sheet.
  9. Bake for 50 to 60 minutes until golden and softly set.
  10. Cool for 5 to 10 minutes before serving.

Notes

  1. A slight jiggle in the center is normal.
  2. Drain spinach thoroughly before using.
  3. Use seeded tomatoes to reduce excess moisture.
  4. Allow quiche to cool before slicing.
