Description

Tropical Pineapple Chicken Rice Delight combines tender chicken, sweet pineapple, and fragrant rice, offering a delightful balance of savory and sweet flavors. The dish is easy to make and brings a refreshing tropical twist to traditional comfort food. It’s perfect for family dinners, special occasions, or meal prepping for the week.

Ingredients

Scale

For the dish:

  • 1 lb boneless, skinless chicken breasts or thighs

  • 2 cups fresh or canned pineapple (drained if canned, chopped if fresh)

  • 1 cup jasmine or basmati rice (brown rice or quinoa for a healthier option)

For the marinade:

  • 3 tablespoons soy sauce

  • 1 teaspoon grated ginger

  • 2 cloves garlic (minced)

For the seasoning:

  • 1 tablespoon soy sauce

  • 1 teaspoon paprika or chili flakes (optional, for heat)

  • Fresh cilantro or parsley (for garnish)

Instructions

  • Marinate the Chicken: Mix soy sauce, garlic, and ginger in a bowl. Coat the chicken in this marinade and let it sit for 30 minutes.

  • Cook the Rice: Follow the package instructions to cook the rice. For extra flavor, use chicken broth instead of water.

  • Sear the Chicken: Heat a pan over medium-high heat. Add oil and sear the marinated chicken for 5-7 minutes per side until fully cooked.

  • Prepare the Pineapple: If using fresh pineapple, chop it into chunks. Set it aside. If using canned, drain it thoroughly.

  • Combine: After cooking the chicken, set it aside. In the same pan, add the pineapple and let it cook for a few minutes, allowing it to caramelize slightly.

  • Assemble: Serve rice on a plate, top with the seared chicken, and add the caramelized pineapple. Garnish with fresh herbs like cilantro or parsley.

Notes

For a spicier version, add extra chili flakes or chopped fresh chilies.

You can replace chicken with tofu or tempeh for a vegetarian option.

Use quinoa or cauliflower rice for a low-carb alternative.
