Syrup

4 cups sugar

4 cups water

1½ tablespoons lemon juice

2½ tablespoons semolina

2 tablespoons butter

2½ cups flour

1 tablespoon corn starch

2 cups water

3 eggs

2 tablespoons sugar

Oil (enough for deep frying)

½ cup pistachios (for garnish)

½ teaspoon salt

Instructions

Put water and sugar in a pot and bring to a boil.

Add lemon juice, simmer for about 10 minutes, and allow syrup to cool completely.

In another pot, mix water and butter, and heat until the butter melts.

Gradually add flour, stirring constantly for 10 minutes until a smooth dough forms.

Remove from heat, transfer dough to a bowl, and let it cool.

Add eggs one by one, mixing thoroughly after each addition.

Add semolina and corn starch, and mix until a batter-like consistency forms.

Fill a star-nozzle piping bag with the dough.

Pipe small pieces of dough into cold oil.

Turn on medium heat and fry until golden brown and doubled in size.

Remove the pieces with a slotted spoon and dip into cold syrup for 2–3 minutes.

Place tulumba on a plate and sprinkle with crushed pistachios.

Repeat the frying and soaking process for remaining batches.

Serve warm with Turkish tea.
Notes
Always cool the syrup before dipping the fried dough to maintain crispness.
Fry over medium heat for even color and texture.
Best enjoyed fresh but can be stored in an airtight container for up to two days.
