  • 1 lb ground beef (or turkey, chicken, or plant-based meat)

  • 1 can black beans (or pinto beans, refried beans)

  • 3 cups Fritos, Doritos, or tortilla chips

  • 1 ½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)

  • 1 cup salsa or enchilada sauce

  • 1 packet taco seasoning

  • 1 small onion, diced

  • 1 cup sour cream

  • Optional toppings: lettuce, tomatoes, jalapeños, olives, cilantro


Instructions

  • Preheat the oven: Set the oven to 375°F (190°C).

  • Cook the meat: Brown the ground beef (or other protein) in a large pan. Add taco seasoning and stir.

  • Add beans and sauce: Stir in beans and salsa (or enchilada sauce). Simmer for a few minutes to combine.

  • Layer the casserole: Start with a layer of chips in a baking dish. Add the meat mixture, followed by a layer of cheese. Repeat until the dish is full, ending with cheese on top.

  • Bake: Bake for 20-25 minutes until cheese is melted and bubbly.
