Instructions
- Preheat oven to 350°F and grease a 9×5-inch loaf pan.
- Mix zucchini, green onions, eggs, sour cream, and melted butter.
- Stir in shredded cheddar cheese.
- Whisk flour, baking powder, baking soda, and salt in a separate bowl.
- Combine dry ingredients with wet ingredients until just mixed.
- Add 1-2 tablespoons milk or water if batter is too thick.
- Transfer batter to prepared loaf pan.
- Bake for 50-70 minutes until a toothpick comes out clean.
- Cool briefly before removing from pan.
- Slice and serve warm with butter if desired.
Notes
- Do not squeeze moisture from the zucchini.
