Description

Tender zucchini, sweet corn, red onion, garlic, mozzarella, and Parmesan come together in this easy 30-minute baked vegetable side dish.


Ingredients

Scale
  • 3 tablespoons olive oil
  • 1/2 cup diced red onion
  • 1 teaspoon minced garlic
  • 4 medium zucchini, cut into bite-size cubes
  • 1 cup frozen corn
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated or shredded Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat the oven to 350°F.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the diced red onion and minced garlic. Cook for 5 minutes, stirring often, until the onion becomes tender.
  4. Add the cubed zucchini and cook for 8 to 10 minutes, stirring occasionally, until lightly browned and tender but not soft.
  5. Remove the skillet from the heat.
  6. Stir in the frozen corn, mozzarella, Parmesan, salt, and black pepper.
  7. Transfer the mixture to a 9-inch square baking dish and spread it evenly.
  8. Bake uncovered for 15 minutes, until the cheese melts and the vegetables become hot throughout.
  9. Remove from the oven and serve warm.

Notes

  1. Replace the frozen corn with kernels cut from 3 fresh ears of corn when desired.
  2. Cut the zucchini into evenly sized cubes so the pieces cook at the same rate.
  3. Avoid salting the zucchini before browning because salt can draw out extra moisture.
  4. Store leftovers in an airtight container in the refrigerator for up to 4 days.
