Description

Zucchini jam transforms finely shredded garden zucchini, sugar, lemon juice, and flavored gelatin into a sweet, fruity refrigerator or freezer spread.


Ingredients

Scale
  • 4 cups (540 grams) finely shredded zucchini, with its natural liquid
  • 2 cups (396 grams) granulated sugar
  • 1/4 cup lemon juice
  • 1 box (3 ounces) flavored gelatin dessert powder, any flavor

Instructions

  1. Wash the zucchini, trim the ends, and peel it when using a pale gelatin flavor, if desired.
  2. Finely shred the zucchini and measure 4 cups without draining or squeezing out the liquid.
  3. Add the shredded zucchini, granulated sugar, and lemon juice to a stockpot over medium heat.
  4. Stir until the sugar begins to dissolve, then bring the mixture to a gentle simmer.
  5. Reduce the heat to medium-low and cook for 10 to 20 minutes, stirring regularly, until the mixture reduces by almost half.
  6. Add the flavored gelatin powder and stir until it dissolves completely.
  7. Remove the pot from the heat and let the jam cool slightly.
  8. Transfer the jam to clean freezer-safe jars, leaving 1 inch of headspace.
  9. Leave the jars uncovered until the jam cools completely to room temperature.
  10. Cover the jars and store them in the refrigerator or freezer.

Notes

  1. This recipe makes about 24 ounces of jam, or three 8-ounce jars.
  2. Any flavor of gelatin dessert powder works, including strawberry, cherry, peach, and apricot.
  3. Peel the zucchini before using pale gelatin flavors to prevent a green or gray tint.
  4. Do not drain the shredded zucchini because its natural liquid helps form the syrup.
  5. This jam is not shelf stable and must remain refrigerated or frozen.
  6. Refrigerate for up to 1 month or freeze for up to 1 year.
  7. Thaw frozen jam overnight in the refrigerator.
  8. Leave 1 inch of headspace in freezer containers to allow for expansion.
