Description

Greek chicken flatbread with hummus, grilled chicken, Israeli salad, creamy tzatziki, olives, and feta on crisp pizza dough.


Ingredients

  • 1 package grilled chicken breast chunks
  • 1/2 lemon, juiced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Kosher salt
  • 1 pizza dough
  • 1 (10 ounce) container hummus
  • 1 cucumber, peeled, seeded and finely diced
  • 2 plum tomatoes, peeled, seeded and finely diced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped parsley
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, peeled and grated
  • 1 lemon, juiced
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh mint
  • 1/4 teaspoon dried oregano
  • 1/4 cup sliced black olives
  • Crumbled feta cheese
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 425°F.
  2. Toss grilled chicken with lemon juice, olive oil, dried oregano, and salt.
  3. Prepare Israeli salad by mixing diced cucumber, diced tomatoes, olive oil, lemon juice, parsley, and salt.
  4. Prepare tzatziki by squeezing moisture from grated cucumber then mixing with Greek yogurt, lemon juice, garlic, mint, oregano, and salt.
  5. Roll out pizza dough into a flatbread shape and place on a baking sheet.
  6. Bake dough for 8 to 10 minutes until lightly golden.
  7. Spread hummus evenly over the baked flatbread.
  8. Top with seasoned chicken and return to oven for about 5 minutes to warm through.
  9. Remove from oven and top with Israeli salad, tzatziki, olives, crumbled feta, and chopped parsley.
  10. Slice and serve warm.

Notes

  1. Drain grated cucumber well to prevent watery tzatziki.
  2. Bake the dough until lightly crisp before adding toppings.
  3. Store leftovers refrigerated up to three days and reheat in oven for best texture.
