A deli-style sandwich made at home using sun-dried tomato focaccia, savory turkey, fresh vegetables, and a creamy pesto mayo. This flavorful and satisfying lunch option comes together with minimal effort but delivers gourmet taste.
Ingredients
For the Sandwich:

1 loaf (about 400 g) Trader Joe’s sun-dried tomato focaccia

200 g (7 oz) deli-sliced turkey breast

1 large tomato, thinly sliced

1 handful of greens (sprouts, microgreens, or spinach)

A few slices of red onion
For the Pesto Mayo:

¼ cup mayonnaise

¼ cup pesto
Instructions

Toast the Bread: Preheat oven to 400°F (200°C). Toast focaccia loaf on a tray for 5–8 minutes until warm and slightly crisp.

Make the Spread: Mix mayo and pesto in a small bowl until smooth.

Slice the Focaccia: Slice the loaf horizontally to create a top and bottom half.

Assemble: Spread pesto mayo on bottom half. Layer with turkey, tomato, greens, and onion. Add a bit more pesto mayo on top of the veggies. Place top half of bread back on.

Cut and Serve: Press sandwich gently and cut into six portions (halved vertically, then thirds horizontally).
Notes
Substitute with any focaccia if sun-dried tomato is unavailable.
Add mozzarella or provolone for extra richness.
Omit turkey and use grilled veggies for a vegetarian option.
Pesto mayo can be made ahead and refrigerated for up to 3 days.
